Start this very early as you'll probably need at least 7 hours depending on the thickness of your roast. Keep it low and slow and this will come out absolutely delicious!
INGREDIENTS
1 tbsp salt
2 tsp black pepper
1 tsp cayenne pepper
1 tsp oregano
1/2 tsp chili powder
1-2 tsp garlic powder
DIRECTIONS
Combine all ingredients and sprinkle over chuck roast making sure to cover the sides as well. Pat the rub into the meat.
Fill water pan in smoker. Add preferred wood to smoke and bring smoker up to 220F. Ideally, try to keep the temp within 220-250F.
Place roast on smoker. Continue adding water and wood as needed. Begin checking for doneness around 6 hours.
When done, serve sliced roast on fresh buns topped with your favorite BBQ sauce.
NOTES
For increased moisture and tenderness, when the roast reaches around 180F, wrap it in foil and place back on smoker for one hour with the smoker at 250F.
We skip this step since we don't use aluminum foil in cooking, but it does produce excellent tenderness and flavor.
